Cheese Rarebit June 19, 2012

Yum!
This is one of my favorite comfort foods. You can’t go wrong with bread and cheese! Quick and easy, takes about 10 – 15 minutes start to finish. Serves about 6 unless you eat like my husband and I.

Ingredients

1 cup 2% milk
2 Tbsp. flour
2 tsp. Worcestershire sauce
1 tsp. dry mustard
1/8 tsp. cayenne pepper
1 lb. (16 oz.) cheddar cheese, shredded (no low fat cheese)
1 loaf ciabatta, saloio, or french bread
Parsley or watercress, for garnish

Sauce in progress!Directions

1. Fill the bottom half of a double boiler halfway with water and heat to a simmer. Replace top of double boiler and heat for about 2 minutes.

2. Add milk to pan. With a whisk, gradually add flour, dried mustard, cayenne, and worcestershire sauce.

3. In small handfuls, add shredded cheese and wisk until fully incorporated before adding next handful. Repeat until all cheese is used up.

4. Slice up bread and place on plate. If desired,  you can broil or toast bread until lightly toasted. Spoon sauce over slices and garnish with chopped parsley or watercress. Serve immediately.

NOTE: This is delicious served with stewed tomatoes and green beans!
