Baja Fish Taco

Delicious ToppingsI’ve posted before I got a beautiful huge filet of grouper at the farmer’s market and I am using as many ways as I can. Also, in my quest to experiment with different foods, I made a slaw out of Brussels sprouts. This is a recipe for one as my husband was again on night shift but simply double it or more. Customize for your own taste. Delicious!

For the Fish:

2 Tbsp. vegetable oil
1 fish filet (about 4.5 ounces, I used grouper)
1/4 tsp. crushed coriander
1/4 tsp. cumin
1/8 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. black pepper
1 Tbsp. flour

For the Slaw:

2 Tbsp. shredded Brussels sprouts
1/4 tsp. chopped cilantro
1/8 tsp. lime juice
1/8 tsp. honey
1 tsp. mayonnaise
salt and pepper, to taste

The Taco:

1 flour tortilla
1 Tbsp. butter
9 ounces shredded cheese (I used half cheddar and half smoked hot pepper cheese for bite)
1 prepared fish filet, cut into chunks
1/2 avocado, peeled and sliced
2 Tbsp. Brussels sprouts slaw
1 Tbsp. chopped tomatoes

Directions:

Brussels Sprouts Slaw1. Prepare the slaw. Finely chop or shred Brussels sprouts. In a small bowl combine shredded Brussels sprouts, chopped cilantro, lime juice, honey, mayo, and salt and pepper, if desired. Set aside.

Fry until golden brown

2.Prepare the fish. Place flour on a paper plate. Combine seasonings. Cut fish filet into large chunks (I cut mine into 4 sections). Sprinkle each side with seasonings and dredge in flour, coating evenly. In a medium skillet, heat vegetable oil over medium heat. When oil is hot, add fish, cook about five minutes and turn fish over, cook another five minutes until fish is golden brown and flakes easily with a fork. Remove from oil and place on paper towel to drain.

3. Start the taco. Heat a cast iron, or heavy non-stick skillet, over medium heat. Spread butter on one side of the tortilla evenly. Place tortilla in skillet and add shredded cheese to one side of the tortilla. Cook for 30 seconds, then flip tortilla in half. Cook 2 minutes then flip tortilla over so the other half is cooking. Cook 1 additional minute. (You will know you are done when cheese is melted. Place tortilla on a plate.

Yummy!4. Add the toppings. Open up the tortilla and add fish chunks, avocado slices, slaw, and tomatoes. Fold tortilla back over and enjoy!
